Singapore Curry Noodles

This noodle dish is really tasty and is a great way to use up random veggies from the fridge.  Basically it is a veggie stir fry combined with curried noodles to make an easy, delicious and filling meal.  One of the things I always do when serving this dish is add lots of fresh herbs at the table to make a cool, fresh and crunchy contrast to the hot noodles and veggies.  Because I eat mostly vegetarian, I add protein in the form of chopped peanuts but if you want a meatier dish, add meat, fish or shrimp into it when stir frying the veggies.  This recipe is my adaptation of the Singapore noodles that appear in the cookbook called Asian: Tasty Recipes for Every Day (The Complete Cookbook).

 

Singapore Curry Noodles

Ingredients

  • 5 oz dried rice vermicelli
  • 2-4 Tbsp coconut oil or other oil suitable for high temp cooking
  • 2 Tbsp curry powder (use your favorite brand)
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 cup snow peas, sliced lengthwise
  • 1 cup carrots cut into matchsticks
  • 2 ribs of celery, thinly sliced
  • 2 Tbsp soy sauce
  • 4 green onions, thinly sliced on the diagonal
  • Garnish
  • 1/4 cup chopped cilantro or mint (or a combo)
  • 1/4 cup chopped peanuts
  • Sriracha hot sauce

Instructions

  • Place the vermicelli in a large, heat proof bowl and cover with boiling water. Let the vermicelli soak for 5 minutes then drain very well.
  • Heat 2 tablespoons of oil in the wok (or large skillet) until almost smoking. Stir fry the snow peas, carrot and celery until barely tender then remove from the wok.
  • Add remaining 2 tablespoons of oil to wok and add garlic and curry powder, stir frying for 1 - 2 minutes before adding onion. Stirfry an additional 2 -3 minutes to soften and cook onions.
  • Return the vegetables to the wok and add the drained noodles, green onions and soy sauce. Toss thoroughly to combine and transfer to a serving platter.
  • Garnish with cilantro/mint, chopped peanuts and Sriracha hot sauce.
