Paleo Carrot Slaw


This is a quick Paleo carrot slaw that is a refreshing, crunchy accompaniment to your dinner plate.  Like any slaw or salad, the ingredients can vary according to what you have on hand in the refrigerator.  If the rest of the meal is heavily spiced or strongly flavored, then I usually just season the slaw with lemon juice, salt and walnut oil.  If the rest of the meal is a simple flavor, I like to add some contrast by spicing the slaw with something stronger like curry powder or ras el hanout.  You can alter it to whatever suits your needs at the moment.  Like most slaws, this one keeps well in the refrigerator for a couple of days so make a big batch and enjoy it for dinner and a couple of random lunches too!

Carrot Slaw


  • 1 lb of shredded carrots (use more or less to taste)
  • 1 tart apple, peeled and shredded
  • 1/4 head of cabbage (I like Napa or Green for this recipe)
  • Juice from 2 lemons
  • 2 Tbsp walnut oil or olive oil
  • 1 tsp salt (or more to taste)
  • Optional
  • 1 cup chopped walnuts or pecans


  • Shred the carrots, apple and cabbage in your food processor. Dump the mixture out into a large bowl and toss to combine all of the shreds.
  • Add lemon juice, oil and salt and then toss thoroughly to distribute throughout the slaw. (If using nuts, add them with this step)
  • Let the slaw sit for 15 minutes and then taste for seasoning. Adjust seasoning if necessary.
  • This slaw should be served chilled, and can keep in the refrigerator for a few days.
  • Try serving with grilled meat, seafood or chicken for a refreshing taste complement.

      This is one of those recipes that can be endlessly altered to fit your needs. Try not quite ripe mango or peach instead of the apples. Replace some or all of the carrots with parsnips. Try different varieties of cabbage. Go crazy with different spices. Make it spicy.
