Easy Roast Duck


This week I finally got around to making a surprisingly simple, delicious, easy roast duck.  I like to eat duck but, until now, I had never made a duck at home because I assumed it was too technical and complicated.  Now I know that I have been missing out on an easy and delicious bird all of these years!  My kids loved the rich flavor of the meat and they ended up eating more than half of the duck as their after school snack along with thin sliced Honeycrisp apples.

With a success like that, you can be sure that duck will be in the regular rotation from now on!  As a bonus, after I roasted the duck, I saved all of the rendered fat and I have been using it a little at a time to make AMAZING home fries in the oven.

  • 5 lb duck (defrosted if frozen)
  • 3 tsp herbs de provence
  • 1 1/2 - 2 tsp sea salt


  • Preheat oven to 350 degrees and prepare roasting pan with an oven safe roasting rack.
  • Remove giblet package from duck's cavity and rinse duck under running water. Pat the bird dry with paper towels on the inside and outside.
  • Using a toothpick or skewer, carefully prick the skin and fat layer all over. Be careful to not pierce the flesh. This step allows the fat under the skin to drain off during cooking and gives you really nice crispy skin.
  • Rub the herbs and salt all over the outside and inside of the bird.
  • Roast the duck for a total of 2 hours, basting the bird with its own fat every 30 minutes. If you have a convection oven, turn on the fan for the final 15 minutes of cooking to really crisp the skin.
  • The duck is done when an instant read thermometer reads 180 degrees in the thick part of the thigh and the cavity juices are running clear.
  • Remove from the oven and let it rest for 15 minutes before carving.
